How can I set up just one ball to parctice pulls ?

When you open the game offline, there's a menu called setup/trick shots. There, you can choose the game and table, and when in game, press insert. Then you can add/remove balls from the table. M to move the cue ball and there you go! :D

Is there anyway of setting up a 9 ball rack to practise the break?

Just choose 9-ball as the game after choosing trick/setup shot from the main menu.

play a game offline alone and press undo after the break!

We used to have a re-rack option for trick/setup shot mode. Maybe we should put that back into the next gen VP.
